As per new updates Apple has blocked iOS downgrades.
Apple stops signing iOS 7.1.2, and blocks iOS downgrades.

As of 26 September 2014, Apple no longer supports iOS 7 after rolling out two point updates for iOS 8.

Using iTunes to restore your iOS device to factory settings will have no effect on downgrading to the previous version of iOS as Apple has stopped supporting it. 7.1.2 signing has been killed.
Also, apps can't support iOS 7 and below forever.
Users of devices running iOS 6 can't even upgrade to iOS 7.1.2 since Apple has stopped signing it.

This is why I use ether Windows or Android for my tablets.

Apple stopped signing the iOS7 firmware and it will no longer run. So you really can't. Make peace with 8.
