As a white-looking black person (I'm technically only an eighth black, but I'm still half-Mexican and yet look like my Jewish grandfather) who grew up around lots of black people, I have never once heard black people call themselves "people of color." It just makes you sound like a pretentious tryhard. You're better off just calling white people "white" and black people "black." "African-American" is fine too but saying something like "Afro-American" just makes me think of people in afros, which would probably contrast with the seriousness of the context if I ever heard it used seriously.

Seriously, just call something what it is. People will be offended whatever you say, and so you should go about trying to please everybody.

I assume you meant to say shouldn't? I can see the logic in calling black vs white Westerners in that way since, well, theyre all from the same country (for approximately as long, too...okay fine I'm talking about America) and sometimes that distinction matters.
